An enthusiastic seafarer, Vanessa loves her job onboard and feels at home at sea. She has worked alongside Greg on a variety of luxury charter vessels around the world, over the 20 years she has gained a profound knowledge of what it takes to successfully host a wide range of different clientele onboard. Excelling in charter yacht hospitality, cooking, provisioning, table setting, meal service, flower arrangements, as well as being an able deckhand to assist with the sailing and line handling on deck.

Leon’s passion for food and hospitality has been shaped by his diverse heritage and international career. With roots spanning Portuguese, Italian, Lebanese, and Brazilian traditions, his cuisine reflects a deep connection to Mediterranean flavors while remaining globally inspired.
Trained in classical culinary techniques and refined through years of experience in high-end hospitality and yachting, Leon blends precision with creativity. He places great emphasis on fresh, seasonal ingredients, thoughtfully sourced to ensure quality and authenticity in every dish.
Leon’s philosophy centers on storytelling through food — connecting guests to the history and provenance behind each ingredient while tailoring every menu to individual tastes and preferences.
